Flexible Baking
Electric deck ovens offer a more flexible baking environment than their gas counterparts. Unlike gas deck ovens that share a single burner for the entire oven, each deck oven can be individually programmed and have its own temperature controls. Because you can control each deck individually, you can bake a variety of different products at the same time across multiple decks.
Our Tagliavini Modular and Tronik electric deck ovens feature individual Smart Touch control panels on each deck, a dedicated steam generator per deck, and a variety of different configuration options.

Powerful & Efficient
The technology behind electric deck ovens has improved dramatically. Electric deck ovens are now more efficient than ever and can provide enough heat to bake rolls and larger products, such as boules.
Our Tagliaivni Modular features highly insulated baking chambers, unique heating elements, and an innovative power management system that help make this oven up to 50% more efficient than the competition! This oven also features an industry-leading recovery time that is on par with their gas counterparts.
Modular Design
Electric deck ovens are the only ovens to offer a modular type design. This enables you to stack multiple decks onto a single footprint. Commonly referred to as modular electric deck ovens, these types of ovens are ideal for growing bakeries that may want to add additional decks in the future.
When purchasing these types of ovens, we generally advise that you purchase a deck with the maximum pan/tray size your production space and workflow can accommodate. This will help ensure you have adequate capacity in the near term and afford you the opportunity to install additional modular decks in the future as your business grows.
Our Tagliavini Modular electric deck oven can be configured with up to 4 pans/trays per deck and stacked up to 5 decks tall. This oven can also be equipped with a variety of different base options, including a proofing chamber (depending on the number of decks)! Lastly, these ovens can also be equipped with an integrated loader for added convenience.
Wholesale & Industrial Baking
Traditionally, gas deck ovens were the oven of choice for wholesale and industrial baking operations. However, there are now powerful, highly efficient electric deck ovens that are designed for use in wholesale and industrial production environments.
For example, our Tagliavini Tronik electric deck oven scales the same innovative, energy-efficient technology featured in the Modular for larger production. Built for your current and future needs, the Tronik is highly configurable, growing up to 5 decks tall with up to 2,310m2 of baking area. This oven is designed for round-the-clock baking and can be equipped with an integrated loader or an industrial loading solution such as our Multi-Deck or Robot loaders.
Furthermore, because the Tronik is electric, you can bake a variety of different products throughout each deck simultaneously!
Simple Installation & Easy Maintenance
Electric deck ovens are typically easier to install than their gas counterparts. This allows for greater portability as well as reduced startup and installation times. Unlike their gas counterparts, a separate burner technician is not needed for the installation. Also, there are no combustible or carbon dioxide gases generated while baking. Exhaust is used to vent steam and excess heat.
These ovens are designed to be plug-and-play, requiring just an electrical connection, a water and drain line (if steam is desired), and an exhaust vent where required by law.
Regarding portability, electric deck ovens can be equipped on a mobile base with wheels for easier transport, whereas their gas counterparts are generally fixed. In some cases, gas deck ovens such as steam-tube-based ovens are permanently fixed to their install location. In contrast, larger electric deck ovens such as the the Tronik can be moved to a different location if needed.
In terms of maintenance, because there are no burners and each deck can be serviced individually, electric deck ovens require relatively less maintenance than their gas counterparts.
Hybrid Baking Solutions
Unlike their gas counterparts, electric deck ovens can also be combined with convection ovens into a single, stacked footprint, referred to as a combined convection and deck baking center. Our Tagliavini Complex can be configured with our Modular electric deck oven and Termovent convection oven, with an available proofing chamber.
The Complex is ideal for restaurants and in-store/retail baking operations. Their compact footprint enables bakers to have deck and convection baking with the footprint of a typical deck oven.
Dual Gas & Electric Deck Ovens

For those who prefer gas deck ovens, you can also opt for an oven that uses mainly gas with an additional electric deck. Our Tagliavini Termik Mix is a cyclothermic, gas-fueled deck oven with a separately controlled Tronik electric deck as the top deck. This enables your operation to have some flexibility in baking a limited variety of products without requiring the expense and footprint of an additional oven.
Typically, all the decks of a gas deck oven run at same temperature. This makes baking a variety of products that require different baking temperatures a bit challenging. Adding an electric deck enables you to bake a different product at a different temperature than the main baking chambers, all while maintaining the single footprint of a traditional deck oven. This electric deck can also bake simultaneously with the gas-fueled decks below.
Environmentally Friendly
Electric deck ovens are designed to have a much lower carbon footprint than their gas counterparts. This is especially true if the oven is powered using renewable energy. Many local, state-level, and federal government agencies are adopting regulations to limit and cease the use of gas in favor of electricity in response to climate change.
If a baking operation is already harvesting its own solar energy, it may even experience reduced operating costs. Local utilities may also offer discounts or rebates when investing in new environmentally friendly, energy-saving equipment.
