These ovens are designed to maximize heat output using the least amount of energy possible. The Modular at full power is even more efficient than the ECO mode on some competing models! Lastly, This easy-to-install oven offers bakers added flexibility by being able to control baking temperatures for each deck individually.

A dedicated, internal steam generator can be built into each deck.

✓ Purchase Pre-Assembled
Depending on both your door size and oven size, this oven can be purchased pre-assembled for quick final assembly and setup. Alternatively, each deck can be delivered independently and stacked on-site.

✓ Even Baking
This oven provides an even bake batch after batch. Reinforced heating elements are strategically placed at the top and bottom of the baking chamber. This helps ensure gentle and even heat distribution.

✓ Steam Control
Steam is controlled via the digital SMART control panel and manual dampers.

✓ Different Deck Temperatures
Each deck has its own self-contained heating element system and control panel. This enables baking of different products at the same time. Maximum temperature is 280° C | 536° F.

✓ Smart Touch
An intuitive digital 7″ display control panel with built-in recipe storage, energy saver management, remote display mode, remote maintenance, internal diagnostics, and internet connectivity. The system also provides comprehensive control over each deck, including baking temperature, baking time (with alarm), lighting, percentage of power used, power distribution between deck ceiling and floor, and steam delivery.

Automatic steam exhaust valves can be installed as opposed to the standard, manual damper system.

✚ Liter Counter
Ability to volumetrically measure water that is distributed to the steam generator.

✚ Integrated Oven Loaders
A manual, counter-weighted oven loader built directly into the oven.

✚ Base Storage
Available base with tray holders upon request.

✚ Booster Function
Available as an additional add-on, this allows the oven to reach the desired temperature in less time.

✚ Proofer
A proofer can be equipped within the support base of the oven.

  • Configured with wheels.
  • The proofer features: heating, ventilation, and humidity control system settings that are configured via a control panel, capable of storing up to 9 proofing programs.
  • V-molded floor with a central drain for easy cleaning and washing of the proofing chamber.

Recovery Time

While traditional “ECO” mode options typically sacrifice performance for less consumption, Tagliavini’s efficiency is achieved even when the oven is at its highest temperature, with both land (floor) and sky (ceiling) fully powered, and steam activated. This means even less consumption may be observed depending on your baking needs and temperatures! As a result, the Modular remains more efficient at its full baking power than the ECO mode on some competing models! 

The Tagliavini Modular electric deck oven is up to 65% more efficient than the competition, with efficiency gains ranging between 18 – 66%! This is made possible via our unique Power Management System (PMS). This innovative system provides industry-leading recovery times, generating the maximum amount of heat output using the least amount of energy possible. This is coupled with highly insulated baking chambers and uniquely designed heating elements to achieve industry-leading efficiency. Our system constantly monitors temperature and electrical needs, adapting energy on demand to meet your baking needs.

PROVEN EFFICIENCY

We’re proud to be an unrivaled leader in oven efficiency. We sought to prove this efficiency by replicating real-world production demands in our Baker’s Lab, measuring the actual energy consumption during baking – and the results did not disappoint!

During our recent test, we baked 6 batches of artisan sourdough boules, seeking to achieve the fastest preheating possible, lightning quick recovery times, and a beautiful bake!

The results speak for themselves. We were able to achieve preheating in only 52 minutes using 100% power. Each batch was also baked using 3 seconds of steam, with recovery times of only 1 – 3 minutes in between each batch. The end result was an average hourly consumption of only 2.46 kWh, far below the maximum power consumption of 4.54 kW.

When baking on any deck oven, the pre-heating phase tends to use the most energy. When analyzing efficiency after preheating, the average hourly consumption was an astounding 1.94 kWh over 3 hours and 52 minutes (3.87 hours)!
